We take Atlantic Cod's Roe and 'dry-brine' over night to cure. It's then gently cold smoked for fourteen hours over oak in our brick kiln smoker, carefully monitored by our experienced staff to emerge as Cley Smokehouse Smoked Cod's Roe.
A little goes a long way, fantastic on hot, buttered toast with a twist of lemon and a grind of black pepper. Blitz with a taste-free oil, such as sunflower, for home-made Taramasalata.
Keep refrigerated (store below 5 degrees C). Generally will keep for 12 days from delivery date (Important: Always refer to use by date on the packet).
Suitable for home freezing (must be frozen before use by date). Consume within 3 months of freezing. Thoroughly defrost before use.
