We take whole sides of salmon, trim and fillet to give us the loin, or royal fillet and then slowly cure with fennel and pastis to give you
another sophisticated table centrepiece from our limited edition Christmas royal fillet range.
With the time to cure we can only make 100 royal fillet of fennel and pastis cured salmon for the Christmas this year.
