Smoked Buckling
Hot smoked herring with the head & insides removed, retaining the roe. Giving a delicate combination of roast and smoke flavors.
Buckling are hot smoked and can be eaten cold or gently warmed before serving. Ideal with horseradish sauce

Recipe idea

1. Put the Buckling into a shallow oven-proof dish and warm through gently, retain oils that are released
2. Put the warmed through herring to one side and pour the oils released during the warming process into a small saucepan, Add 2 pinches of fresh taragon and mix in 3 tablespoons of double cream and bring to a simmer.
3. Place the Buckling onto a plate and pour over the sauce. Serve with new potatoes and vegetables of choice.
Keep refrigerated (store below 5 degrees C). To enjoy your Buckling at their best they should be consumed 1-2 days after delivery. Generally will keep for 10 days from delivery date (Important: Always refer to use by date on the packet).

SUitable for home freezing (must be frozen before use by date). Consume within 3 months of freezing. Thoroughly defrost before use
